It was the brainchild of Mark Gautier, who has combined his heritage (his father was a French chef, and Mark has spent decades refining his repertoire of French regional dishes for everyday eating), and experience (he’s worked extensively in both France and the UK at all levels, from brasseries to Michelin-starred restaurants), to create a menu that reflects both his love of French cuisine and his respect for its traditions. With his own family – his children Liana and Guy, who’ve inherited their parents’ culinary skills – Mark is bringing the Gallic classics to a whole new audience.
